Spiced Zucchini Bread

There are simply few things more satisfying to start your day than a cup of coffee with a slice of homemade bread.

Our zucchini bread includes both grated carrot and zucchini, which makes for a melt-in-your-mouth texture and a delicate sweetness. The combination of spices, vanilla and brown sugar gives the bread a rich depth of flavor, and the addition of applesauce ensures the bread stays moist for days. If you like things a little more indulgent, add in your favorite chocolate chips or chopped nuts for crunch. We recommend serving warm with a slab of butter and a pinch of flaky sea salt.

Spiced Zucchini Bread

Ingredients

  • 1-1/2 cup grated zucchini
  • 1/2 cup carrot, peeled and grated
  • 1/2 cup chocolate chips
  • 1/2 cup applesauce, unsweetened
  • 3/4 cup dark brown sugar
  • 1/4 cup white sugar
  • 2 large eggs
  • 1/3 cup canola oil
  • 1 tsp vanilla
  • 1-1/2 cup all-purpose flour
  • 1/2 tsp baking soda
  • 1/2 tsp baking powder
  • 1/2 tsp salt
  • 1/2 tsp pumpkin pie spice

Instructions

  • Preheat oven to 350 degrees.
  • Add zucchini, carrots, oil, eggs, applesauce, vanilla, sugars,  and pumpkin pie spice to a large bowl and mix well.
  • Whisk together flour, salt, baking powder and soda in a separate bowl. Gradually add the dry ingredients into the wet, folding until just combined.
  • Pour into a prepared loaf pan and bake for 40-55 minutes or until a toothpick comes out clean. Allow to cool slightly and serve.
