Peppercorn & Garlic Crusted Whole Tenderloin

Nothing says celebration quite like a perfectly roasted beef tenderloin.

This version gets its irresistible flavor from a fragrant blend of garlic, rosemary, thyme, and coarsely cracked peppercorns that form a golden, buttery crust. Juicy, tender, and deeply seasoned, it’s a dish made to impress—ideal for holidays, dinner parties, or any moment that deserves a little extra grandeur.

Ingredients

    • ¼ cup (2 ounces) unsalted butter, softened
    • 4 medium-size garlic cloves, pressed (2 teaspoons)
    • 3 tablespoons black peppercorns, coarsely cracked
    • 1½ teaspoons finely chopped fresh rosemary, plus sprigs for garnish
    • 1½ teaspoons dried thyme
    • 1 (4- to 5-pound) beef tenderloin, trimmed, halved crosswise, tail end tucked under, and tied every 1½ inches
    • 2 tablespoons kosher salt
    • 3 tablespoons olive oil, divided

Instructions

Step 1

Preheat oven to 450°F. In a small bowl, mash together butter, garlic, peppercorns, chopped rosemary, and thyme until combined.

Step 2

Heat a large cast-iron skillet over medium-high heat. Sprinkle tenderloin evenly with salt. Add 2 tablespoons of olive oil and heat until shimmering.

Step 3

Add one half of the tenderloin to the skillet and sear, turning occasionally, until browned on all sides, about 10–12 minutes. Transfer to a baking sheet and set aside. Repeat with the remaining tablespoon of olive oil and second half of the tenderloin.

Step 4

Let both tenderloin halves rest for 5 minutes, then return them to the skillet. Spread the prepared butter mixture evenly over the tops.

Step 5

Roast until an instant-read thermometer inserted into the center registers 120°F (for medium-rare), about 18–25 minutes.

Step 6

Transfer tenderloins to a cutting board and let rest for 15 minutes. Remove and discard kitchen twine, then carve. Transfer slices to a serving platter and garnish with rosemary sprigs.
