S'mores Popcorn

Sweet and salty lovers, this snack is for you.

We love this as a road trip snack. The only challenge is not polishing it off before the trip starts.

S'mores popcorn is everything you love about s'mores - graham crackers, chocolate and toasty marshmallows, but with a fraction of the effort. The bitterness of the dark chocolate pairs nicely with the sweetness of the marshmallows, but feel free to use whatever chocolate you love.

Ingredients

- 2 tbsp canola oil
- 1/2 cup popcorn
- 2 tbsp butter, melted
- 3 graham crackers, broken into bite-sized pieces
- 1 tbsp raw sugar
- 1 tsp salt
- 1/4 cup dark chocolate chips
- 1 cup mini marshmallows

Instructions

Step 1

In a large pot, heat oil over medium heat. Add the popcorn and partially cover with a lid, leaving a gap to allow steam to escape. Allow the corn to pop, occasionally shaking the pot to ensure nothing sticks to the bottom. When the popping stops, turn off the heat and remove the lid. Add the melted butter, sugar and salt, and carefully toss to distribute.

Step 2

Set the oven to broil and allow it to heat up.

Step 3

Line a large sheet pan with parchment paper. Spread the popcorn onto the sheet pan. Scatter the graham cracker pieces and marshmallows evenly over the popcorn. Place the popcorn under the broiler and allow the marshmallows to get charred and puffy. It will take less than a minute, so don’t walk away!

Step 4

Place the chocolate chips in a microwave safe cup and cook in the microwave for increments of 15 seconds, stirring each time, until the chocolate has melted. Drizzle the chocolate over the popcorn. Allow to cool, then enjoy!
