Spiced Salmon Sliders with Oven-Baked Fries

A 30-ish minute meal that will become weeknight favorite.

Anything on a buttery brioche bun in a winner in our eyes.

A spice marinated salmon is complemented nicely by a fresh Dill Yogurt Sauce. The combo of a buttery brioche bun, spicy salmon, and a cooling yogurt sauce is a trio that will make your weekly dinner rotation. Pair it with some home fries and you've got a winner.

Ingredients

    • Oven-Baked Fries
    • 3 large (8 ounces each) Yukon Gold potatoes
    • 2 tablespoons olive oil
    • ¾ teaspoon kosher salt, plus more to taste
    • ½ teaspoon garlic powder
    • ½ teaspoon onion powder
    • ¼ teaspoon black pepper
    • ¼ teaspoon smoked paprika
    • Spiced Salmon Sliders
    • ½ teaspoon smoked paprika
    • ½ teaspoon kosher salt
    • ½ teaspoon black pepper
    • ¼ teaspoon garlic powder
    • ⅛ teaspoon cayenne pepper
    • 2 (6-ounce, 1-inch-thick or thinner) skinless salmon fillets, patted dry
    • 1 tablespoon olive oil
    • 4 brioche slider buns, split
    • Butter lettuce leaves
    • Dill Yogurt Sauce
    • 1 cup plain whole-milk Greek yogurt
    • 1½ tablespoons chopped fresh dill
    • 1 tablespoon Dijon mustard
    • ½ teaspoon grated lemon zest
    • 1 teaspoon fresh lemon juice (from 1 lemon)
    • ½ teaspoon kosher salt
    • ½ teaspoon black pepper
    • 1 garlic clove, grated (about ¼ teaspoon)

Instructions

Step 1

Prepare the Oven-Baked Fries: Place a large rimmed baking sheet in the oven and preheat to 450°F.

Step 2

Cut each potato lengthwise into 8 wedges. In a large bowl, toss wedges with olive oil, kosher salt, garlic powder, onion powder, black pepper, and smoked paprika to coat. Carefully remove baking sheet from oven and spread potato wedges, cut side down, in a single layer. Bake for 25 minutes, flipping halfway through. Season with salt to taste.

Step 3

While fries bake, prepare the Spiced Salmon Sliders: Stir together paprika, salt, black pepper, garlic powder, and cayenne in a small bowl. Rub mixture evenly over salmon. Heat olive oil in a skillet over medium heat. Cook salmon, flat side up, for about 4 minutes per side or until blackened. Set aside.

Step 4

Wipe skillet clean. Arrange buns, cut side down, in skillet. Cook, undisturbed, until toasted for 1 to 2 minutes.

Step 5

To serve, cut each salmon fillet in half crosswise. Top each bottom bun with 1 salmon half. Add lettuce and top with desired sauce. Cover with the top bun and serve alongside the oven-baked fries.

Step 6

Make the Dill Yogurt Sauce: In a small bowl, stir together the sauce ingredients until well combined. Serve immediately, or refrigerate, covered, for up to 1 week. Spoon over sliders and use as a dip for fries.
