Mike Ryan's Tzatziki Dipping Sauce with Chicken Souvlaki

The Tzatziki Dipping Sauce is the star of this show. A few simple ingredients make a fresh and tart sauce that pairs perfectly with grilled chicken souvlaki, by Mike Ryan!

Ingredients

    • TZATZIKI
    • 1 1/2 cups low fat Greek yogurt
    • 2 garlic cloves
    • 1/2 cup grated cucumber
    • 1/4 cup dill
    • Half of a lemon, squeezed
    • Salt and pepper to taste
    • CHICKEN SOUVLAKI
    • 4 chicken breasts
    • 2 tsp dried oregano
    • 2 tsp dried rosemary
    • 1 tsp paprika
    • 2 tsp kosher salt
    • 1 tsp pepper
    • Olive oil to lightly coat the chicken
    • CUCUMBER SALAD
    • 1 large cucumber
    • 3 tbsp of champagne vinegar
    • 1/4 cup feta cheese
    • Pinch of salt

Step 1

Start by grating your cucumber. Once grated, place the cucumber in a cheese cloth or mesh strainer to squeeze out any excess liquid.

Step 2

Roughly chop your dill and mince your garlic. 

Step 3

In a medium-sized bowl, mix together the yogurt, garlic, cucumber, dill, and lemon juice. Add salt and pepper to taste. Let this sit in the fridge until you’re ready to serve.

Step 4

To make your chicken souvlaki, take your chicken breast and cut them into chunks. Carefully assemble 4-5 pieces of chicken breast per skewer.

Step 5

Lightly coat the chicken skewers with olive oil.

Step 6

Mix the dried oregano, dried rosemary, paprika, kosher salt, and pepper into a small bowl and sprinkle evenly on your chicken.

Step 7

Pre-heat your grill to 450F. Grill each side of your skewers for 2-3 minutes, cook with the chicken covered. The internal temperature of the chicken should read 165F. If you don’t have a grill, this can easily be made in your oven or in a fry pan. For oven preparation: Preheat your oven to 400F. Place your chicken skewers on a foil lined sheet tray, and place onto the center rack of the oven. Bake for 20 minutes, flipping the chicken half way through. Remove the chicken from the oven and set your oven to its broil setting. Place the chicken back in the oven for 2-3 minutes. Remove the chicken from the oven let it rest. For fry pan preparation: Heat a grill pan or skillet on medium-high. Once its hot, add 2 tbsp of neutral oil into your pan. Sear your chicken flipping every 3-4 minutes to achieve a beautiful crust. Cook for 15-18 minutes depending on the size of your chicken. The internal temperature should read 165F.

Step 8

To make the cucumber side salad, dice 1 large cucumber and toss in 3 tbsp of champagne vinegar and a pinch of salt. Top with feta cheese.

Step 9

Serve the chicken skewers with your chilled Tzatziki sauce and cucumber salad, enjoy!
