Salty feta serves as the perfect pairing to the sweet and juicy watermelon, while the pistachios provide nice texture and crunch. It’s a perfect bite of food on its own, or a fantastic side for a summer barbecue or dinner on the patio.

Ingredients

4 cups seedless watermelon, cut into squares

1/2 cup feta, crumbled

1 tsp olive oil

1/2 tsp flaky sea salt

1 tbsp basil, sliced

1 tbsp mint leaves

2 tbsp roasted pistachios

Instructions

Pile the watermelon squares atop a large serving dish. Dress with a drizzle of olive oil and a healthy pinch of flaky sea salt. Top the watermelon with the crumbled feta, pistachios, basil and mint. Serve cold.
