Banana Fritters with Rum Sauce

Who doesn't want a sweet treat for brunch?

Serves: 6

Time: 40 minutes

Golden, crispy on the outside and soft, sweet on the inside.

We've all got those over-ripe bananas, and this recipe is the pefect way to put them to use. With just a few pantry staples, you can create bites of warm comfort food with a Rum sauce that sets it over the top.

Ingredients

  • Fritters

    • Neutral oil, for frying (such as canola oil)
    • 1½ cups mashed ripe bananas (from about 3 bananas)
    • ¼ cup half-and-half or whole milk
    • 1¼ cups all-purpose flour
    • 1 teaspoon baking powder
    • ½ teaspoon baking soda
    • 2 tablespoons light brown sugar
    • 1 teaspoon ground nutmeg
    • ¼ teaspoon ground cinnamon
    • Pinch of kosher salt
    • Powdered sugar, for dusting (optional)
    • Rum Sauce

    • ¼ cup packed light brown sugar
    • ¼ cup semisweet chocolate chips
    • ½ cup unsalted butter
    • ½ cup dark rum

Instructions

Step 1

Pour oil into a Dutch oven to a depth of 1½ inches. Heat to 330°F over medium-high heat.

Step 2

In a large bowl, combine the mashed bananas and milk. In a separate medium bowl, whisk together the flour, baking powder, baking soda, brown sugar, nutmeg, cinnamon, and salt. Stir the dry ingredients into the banana mixture until just combined. Set aside.

Step 3

Working in batches, carefully spoon the batter into the hot oil using heaping tablespoons. Fry, turning occasionally, until the fritters are deep golden brown and cooked through, 4 to 5 minutes. Transfer to a paper towel-lined plate to drain. (Adjust heat between batches as needed to maintain oil temperature.) Dust with powdered sugar and serve warm with Rum Sauce.

Step 4

In a small high-sided saucepan, cook the sugar, chocolate, and butter over medium-high heat. Whisk constantly until melted and smooth, about 2 minutes.

Step 5

Pour in the rum and continue to whisk constantly. Cook until the sauce thickens slightly, about 3 minutes. (Note: the mixture will boil up during this step.)

Step 6

Remove from heat and let cool for 5 minutes before serving over fritters.
