Colorful Pasta Salad

A bright and colorful Pasta Salad with Summer's best ingredients.

Enjoy outdoor dining this season with this vibrant pasta salad - packed with lots of veggies for a nutrient packed and delicious meal. This recipe originally appeared in the Summer 2021 Escape Issue of Sweet July Magazine.

Ingredients

- 1 (16-ounce) package farfalle pasta
- ¾ cup olive oil
- ½ cup Champagne vinegar
- 1 large shallot, finely chopped (about 2 tablespoons)
- 1 tablespoon light brown sugar
- 1 tablespoon Dijon mustard
- ½ teaspoon dried oregano
- ½ teaspoon kosher salt
- ½ teaspoon black pepper
- 4 ounces salami, cut into small cubes (about ¾ cup)
- 4 ounces pepperoni, cut into small cubes (about 1 cup)
- 1 medium red bell pepper, chopped (about 1¼ cups)
- 1 medium yellow bell pepper, chopped (about 1¼ cups)
- 1 large cucumber, seeded and chopped (about 1¾ cups)
- ½ cup chopped fresh basil
- 1 cup grape tomatoes, halved
- 1 cup pitted kalamata olives
- 1 (8-ounce) container small fresh mozzarella balls (pearls)
- 2½ ounces Parmesan, finely shredded (about 1 cup)

Instructions

Step 1

Cook the pasta according to package directions. Drain in a colander and rinse under cold water for 1–2 minutes to stop the cooking. Set aside until ready to use.

Step 2

In a very large bowl, whisk together the olive oil, vinegar, shallot, brown sugar, mustard, oregano, salt, and black pepper until the sugar dissolves. Add the salami, pepperoni, red and yellow bell peppers, cucumber, basil, grape tomatoes, olives, mozzarella, Parmesan, and the cooked pasta, then toss everything together until evenly coated.

Step 3

Serve immediately, or chill in an airtight container for up to 1 day.
