Date Energy Balls

The perfect on-the-go snack to boost your energy levels!

Serves: 12

The star of this healthy snack are Medjool dates—tasty and packed with nutritional value.

Make them ahead of time (and store them in the refrigerate or freezer) until you need a pick-me-up.

Ingredients

    • 2 cups pitted Medjool dates
    • 2 tsp of vanilla extract
    • 1 cup roasted cashews
    • 2 tbsp ground flax seed
    • 1/2 cup toasted unsweetened coconut flakes
    • 1/4 cup mini chocolate chips (optional)

Instructions

Add all ingredients into a food processor (except chocolate chips) and pulse until combined. Fold in chocolate chips, if desired. Use a small ice cream scoop or spoon to form balls using 1-2 tbsp of mixture. Refrigerate or freeze until ready to eat.
