Leftover Turkey Waldorf Salad

Turn your holiday leftovers into something fresh, colorful, and completely crave-worthy.

Tender turkey, crisp apples, juicy grapes, and crunchy walnuts come together in a light, tangy dressing for a refreshing twist on the classic Waldorf salad. It’s the perfect way to give your leftover turkey new life—simple to toss together, deliciously satisfying, and just what you want after a big holiday feast.

Ingredients

- 3 tablespoons mayonnaise
- 3 tablespoons whole-milk plain Greek yogurt
- 2 tablespoons honey
- 2 tablespoons fresh lemon juice (from 1 lemon)
- ¼ teaspoon kosher salt
- ⅛ teaspoon black pepper
- 1 cup packed, chopped leftover turkey (white and dark meat, about 5½ ounces)
- ½ cup seedless red grapes (about 12), halved
- 1 cup sliced celery (from 3 stalks), plus chopped leaves if desired
- ¼ cup chopped toasted walnuts
- ¼ cup sweetened dried cranberries
- 1 Granny Smith apple (9½ ounces), peeled and chopped
  Mesclun greens, for serving

Instructions

Step 1

In a medium bowl, whisk together mayonnaise, yogurt, honey, lemon juice, salt, and pepper until smooth.

Step 2

Fold in turkey, grapes, celery, walnuts, cranberries, and apple until evenly coated in the dressing.

Step 3

Cover and chill for at least 1 hour (or up to 24 hours) to allow the flavors to meld.

Step 4

Serve the salad over a bed of mesclun greens.
