Pear Spritzer

A sweet and refreshing cocktail with all the Spring feels.

While pears are thought of as a fall fruit, they're in season in the spring, too.

This makes for a perfect Spring sipper. With hints of lemon and fresh citrusy flavor from Lillet Blanc, you'll keep pouring glass after glass.

Ingredients

- 1 large pear, peeled, cored, and cubes (1 1/4 cups), plus sliced pear for garnish
- 1/4 cup water
- 1 tbsp honey
- 1 tbsp fresh lemon juice (from 1 lemon)
- 1/4 cup (2 ounces) gin
- 1/4 cup (2 ounces) wine-based aperitif (such as Lillet Blanc)
- 4 thyme sprigs, divided
- Club soda

Instructions

Step 1

Place cubes pear, water, honey, and lemon juice in a blender. Process until smooth, about 1 minute, stopping to scrape down sides as needed.

Step 2

Fill a cocktail shaker halfway with ice; add gin, aperitif, 2 of the thyme sprigs, and 4 ounces (1/2 cup) of the pear puree mixture. Cover shaker, shake well, and strain evenly into 2 ice-filled highball glasses. Top with a splash of club soda. Garnish with sliced pear and remaining thyme sprigs. Store remaining pear puree mixture, covered, in refrigerator, up to 2 days.
