Strawberry Balsamic Shrub

A little sweet, a little tart and a very refreshing mocktail for a warm day.

Balsamic Vinegar isn't just for dressings — enter the the sweet and refreshing Strawberry Balsamic Shrub.

Our oak-aged Balsamic Vinegar from Italy delivers a smooth, syrupy texture with a sweet tangy flavor that pairs perfectly with just as balanced sweet and tart strawberries. Add in a shot of Gin or Vodka for a spiked version.

Ingredients

- 1 cup strawberries, de-stemmed and roughly chopped (about 1 pint whole strawberries)
- 1 cup sugar
- 1 cup water
- ¼ cup Sweet July Balsamic Vinegar
- ¾ cup apple cider vinegar

Instructions

Step 1

In a medium saucepan, combine the sugar and water over low heat. Stir frequently until the sugar has dissolved and the liquid is clear.

Step 2

Add the strawberries and stir to combine. Simmer for 5–7 minutes, allowing the fruit to soften and break down in the syrup.

Step 3

Stir in the balsamic vinegar and apple cider vinegar. Simmer for an additional 2 minutes.

Step 4

Remove from heat and set aside to cool. Strain the mixture into a glass jar or pitcher and refrigerate until chilled.

Step 5

To serve, pour a few tablespoons of the chilled shrub into the bottom of a glass filled with ice. Top with seltzer water and stir gently to combine.

Step 6

Garnish with fresh strawberries and enjoy.
