Honey Syrup: In a small jar or bowl, whisk together hot water and honey until combined. Allow to cool slightly, but use immediately.

Raspberry Spritz: Add 8 raspberries, rosemary leaves pulled off one sprig, and 3 ounces of the honey syrup into a large cocktail shaker. Muddle until mixed together. Fill with ice and add the lemon juice. Shake together until chilled and well-incorporated. Pour into two ice-filled glasses. Top with sparkling water and serve garnished with raspberries and rosemary sprigs.
