Sweet And Smoky Chicken Breasts

Time: 30 minutes, plus 3 hours to marinate

Not knocking your traditional spice blend, but adding ground coffee along with the classics like rosemary, thyme and paprika takes an average chicken breast to the next level.

And we happen to be partial to our SJ House Blend Coffee with flavor notes of Black Cherry and Hazelnut. Which combined with spicy mustard and balsamic vinegar, creates pure umami. You can slice this up to top a salad or pair it with some vegetables and mashed potatoes for a heartier meal.

Ingredients

- 1 1/2 pounds boneless skinless chicken breast
- 1/2 cup Sweet July House Blend Coffee, ground
- 1/4 cup olive oil
- 1/4 cup dark brown sugar
- 2 tbsp balsamic vinegar
- 1 1/2 tbsp spicy brown mustard
- 4 cloves garlic, minced
- 1 tbsp ginger, minced
- 4 sprigs thyme
- 1 sprig rosemary
- 1 tbsp smoked paprika
- Salt and pepper to taste
- Chopped scallions for garnishing

Instructions

step 1

Place all ingredients except chicken in a resealable bag or airtight container. Mix until well combined. Add chicken and toss until well coated. Marinate for at least 2-3 hours or overnight.

Remove from marinade and grill for 10 minutes, flipping once. If you’re using an indoor grill pan, sear on one side, flip and then place the pan in a preheated 350 degree oven for about 15 minutes. Cook until the internal temperature is 165 degrees. Let rest for 5 minutes before slicing.
