Flaky, golden puff pastry meets creamy herbed ricotta and juicy heirloom tomatoes in this simple yet stunning appetizer.

Each bite layers buttery crispness with bright, fresh flavor—finished with a sprinkle of sea salt and basil for the perfect touch. Ideal for entertaining or elevating an everyday gathering, this dish proves that beautiful food doesn’t have to be complicated.

Ingredients

    • 2 medium-size heirloom tomatoes, sliced into ¼-inch-thick slices
    • ½ teaspoon kosher salt, divided
    • ½ (17.3-ounce) package frozen puff pastry sheets, thawed
    • 1 large egg, lightly beaten
    • 1 cup ricotta
    • 2 tablespoons extra-virgin olive oil
    • 3 large basil leaves, finely chopped (about 1½ teaspoons), plus more small leaves for garnish
    • 1 medium shallot, finely chopped (about ⅓ cup)
    • 1 medium-size garlic clove, finely chopped (about 1 teaspoon)
    • ¼ teaspoon ground black pepper
    • ¼ teaspoon flaky sea salt (such as Maldon)

Instructions

STEP 1

Preheat oven to 425°F. Place tomato slices on a paper towel–lined baking sheet or large plate. Season with ¼ teaspoon of kosher salt and let sit to release excess moisture.

STEP 2

Unfold the puff pastry sheet and place it on a parchment-lined baking sheet. Lightly poke holes all over the pastry with a fork to prevent puffing. Brush evenly with the beaten egg.

STEP 3

Bake for 15–20 minutes, or until puffed and golden brown. Remove from oven and let cool for about 15 minutes. Gently press down on the pastry with your hands to slightly flatten.

STEP 4

While the pastry cools, combine ricotta, olive oil, chopped basil, shallot, garlic, black pepper, and remaining ¼ teaspoon of kosher salt in a medium bowl. Mix until fully combined.

STEP 5

Spread the ricotta mixture evenly over the cooled pastry. Top with tomato slices, sprinkle with flaky sea salt, and garnish with small basil leaves if desired.
