Crispy bacon, melty cheddar, and fluffy waffles come together in this crave-worthy breakfast bake that proves you don’t need fancy ingredients for a seriously satisfying meal. It’s creamy, cheesy, a little sweet, and just the right amount of spicy—perfect for lazy weekends, brunch with friends, or feeding a crowd without breaking the bank.

Ingredients

- 8 large eggs, lightly beaten
- 1 cup heavy whipping cream
- 1 cup whole milk
- ½ teaspoon kosher salt
- ½ teaspoon black pepper
- 1 (12.3-ounce) package frozen waffles, thawed and cut into 1-inch pieces
- 8 ounces sharp Cheddar cheese, shredded (about 2 cups)
- 6 thick-cut bacon slices, cooked and crumbled
- ½ cup pure dark maple syrup
- 1–2 tablespoons Louisiana-style hot sauce, to taste
- ½ teaspoon vanilla extract
- ¼ cup chopped scallions

Instructions

Step 1

Preheat oven to 350°F. In a large bowl, whisk together eggs, cream, milk, salt, and pepper until smooth.

Step 2

Fold in waffle pieces, shredded cheese, and crumbled bacon. Stir gently until well combined.

Step 3

Pour the mixture into an ungreased 10-inch cast-iron skillet. Bake until the eggs are just set, 35–40 minutes.

Step 4

While the bake cools, combine maple syrup, hot sauce, and vanilla in a small saucepan. Cook over medium heat, stirring occasionally, for about 5 minutes until the flavors meld.

Step 5

Sprinkle the cooled breakfast bake with chopped scallions and serve warm with the spicy maple syrup on the side.
