Spiced Zucchini Bread

There are simply few things more satisfying to start your day than a cup of coffee with a slice of homemade bread.

Our zucchini bread includes both grated carrot and zucchini, which makes for a melt-in-your-mouth texture and a delicate sweetness.

The combination of spices, vanilla and brown sugar gives the bread a rich depth of flavor, and the addition of applesauce ensures the bread stays moist for days. If you like things a little more indulgent, add in your favorite chocolate chips or chopped nuts for crunch. We recommend serving warm with a slab of butter and a pinch of flaky sea salt.

Ingredients

- 1-1/2 cup grated zucchini
- 1/2 cup carrot, peeled and grated
- 1/2 cup chocolate chips
- 1/2 cup applesauce, unsweetened
- 3/4 cup dark brown sugar
- 1/4 cup white sugar
- 2 large eggs
- 1/3 cup canola oil
- 1 tsp vanilla
- 1-1/2 cup all-purpose flour
- 1/2 tsp baking soda
- 1/2 tsp baking powder
- 1/2 tsp salt
- 1/2 tsp pumpkin pie spice

Instructions

Preheat oven to 350 degrees.

Add zucchini, carrots, oil, eggs, applesauce, vanilla, sugars and pumpkin pie spice to a large bowl and mix well.

Whisk together flour, salt, baking powder and baking soda in a separate bowl. Gradually add the dry ingredients into the wet, folding until just combined.
